Why not ripe?
To be honest... I picked a watermelon with the biggest white spot - generally a better rule of thumb than thumping them. Unfortunately the whole bunch sucked. I was really going for sweet for that salty sweet effect.

I'm a big fan of Alton Brown and Bobby Flay. They have both made a point that in melon farming they don't go out and turn the melons. So the ones that have spent the most time on the vine have the biggest (most prominent) white or colorless spot. It's always worked well for me until this particular melon. So... Lemons and lemonade and all.

I havent had a great watermelon all summer. They just haven't been that sweat and most gave been a bit mushy.

I look for the same thing. A large white spot.

I'm also a huge fan of Alton and Flay.
I have always enjoyed how Alton tells you why you should do something and not just how to do it.
Flay is simply the king.

If any of you know what Sam's is, it's got the best chocolate muffins in a grocery store. Just had one, and I'm saving the other for tomorrow. Can't wait.

Anyone have a good recipe for Cajun Boiled Peanuts? I followed one today off youtube and I can already tell this batch is waaaay to spicy. Im thinking the Jalopenos got to go. And no thats not a small crock pot, those are huge peanuts.

If you scroll back many pages... I'm sure I posted my deal with boiled peanuts. I love them.

But mine are gonna be wayyyyyy hotter than those.

Just leave out the peppers. They're great without anything spicy. Just make sure that you keep em boiling way longer than you are told to by your recipe. Add some salt... boil the holy shit out of them.

BTW... looks like you need to add way more liquid. Cover em while you boil.

I had a pretty good feeling you might have my back here.

I topped off the water as suggested. They’ll cook over night. I also tried another taste and they arent that hot afterall.

Im gonna try your recipe for the next batch. I have half a bushel, so 12.5 lbs. I always thought Georgia was the peanut state but a Co worker actually drove down to Chiply to buy these, something about the size of the nuts from there.

Whats in this batch is Crab Boil, Lousianna Cajun seasoning, garlic, salt, and jalapeno. Will be interesting to read yours.

I can't remember if I posted all of the ingredients that I use. Let me know if I wasn’t very specific and I'll go through it for you.

When mine are boiling... people have come in the house and started sneezing because of the hot spices and peppers I use. It floats around in the air apparently.

I’m thinking of buying a Big Green Egg. Anyone have any experience/thoughts on whether it’s worth it?

I've had one for years.

I wondered before I got mine if it was worth the money... so it took me a while before I pulled the trigger. It was actually my wife who decided to finally get one. She got it for me as an anniversary gift.

They are worth every penny. One of the best investments ever. We regret not buying one much sooner.

They are very proud of their stuff... but it lasts forever and almost all of it has a lifetime warranty. I've actually taken an old under-grate piece that was ancient up to my egg dealer so I could buy a new one... mine had broken from age. He was like... they'll just replace it for free. I couldn't believe it.

It's a lot of fun to learn to use too. Let me know if you have questions about different kinds of cooks on it etc.

My friend got a knock-off egg. His wife calls it the Fegg... because it's a fake green egg. He regrets not buying the real thing all the time.

The guy who invented the damn things dates a lady in my neighborhood. He's old af if he's still alive. He always stops by my house during the holidays when he's down here visiting this lady. He just knocked on my door and introduced himself the 1st time I met him. He could smell that I was cooking on an egg. Crazy.

My recommendation... go buy one today.

Can you even find one? I was looking in to getting one late spring/early summer since we are cooking out so much more. (one upside of Covid) Nobody around had them in stock, couldnt buy direct either. Maybe things have eased up.
That said, they're freakin awesome

I haven’t checked the stock yet. Will be moving to new house next Spring and thought it would be a good time to upgrade my Weber gas grill.

The only place I've seen the real thing lately is at one of our Ace Hardware stores. But it's one of those old hardware stores that has a little bit of everything. You might try your local Ace though or maybe another hardware store if you have a good local one. @AvengerRam

My advice, keep the Weber, just keep it running but get the Egg for sure

ACE is a local distributor for Green Egg, and none of the stores in New Jersey have in stock. Only accessories.
I did find a company that has in stock, wont deliver and surprisingly not price gouging from what I can tell. $699 for the medium egg, $899 for the large.
Some of the best home made pizza I've ever had came out of one.

you had great detail. My first effort turned out great. After my last post I added a hand full of black peppercorns. Seemed like a good idea, cause I love peppercorn steak. But Its pretty dominant, and swung the flavor to black pepper instead of red pepper so I dont think I’ll do that again. Still great, just could be better. Im gonna use most of your recipe next time.
